Ingredients

  • Goat Meat: Main ingredient; cut into small/medium pieces for even cooking and rich flavor. Prefer he-goat for tenderness and taste.
  • Ehuru (Calabash Nutmeg): Adds warm, nutty aroma and depth of flavor.
  • Uziza Seeds: Brings mild peppery notes that balance the broth.
  • Akpi (Djansang): Adds earthy, slightly bitter richness to deepen flavor.
  • Uda (Grains of Selim): Gives smoky, traditional aroma to the soup.
  • Pepper Soup Spice: Core spice blend that creates the signature pepper soup taste and aroma.
  • Salt: Enhances all flavors and helps draw out meat juices.
  • Seasoning Cubes: Boosts umami and deepens overall taste (use moderately).
  • Scent Leaf: Adds fresh aroma and authentic traditional flavor.
  • Onions: Provide natural sweetness and balance heat from spices and pepper.
  • Pepper: Adds heat; adjust based on spice preference.
  • Water: Forms the broth; use just enough to keep flavors concentrated.
  • Control Onions: Control onions add a soft, natural sweetness that mellows out the heat from your peppers.

Instructions

Step 1: Prep and Season the Meat
Place washed goat meat in a pot. Add chopped onions, pepper, salt, and seasoning cubes, then mix thoroughly to coat the meat evenly.

Step 2: Add Water and Start Cooking
Pour in enough water to cover the meat and begin boiling. This helps start building the broth base.

Step 3: Cook Until Tender
Allow the goat meat to cook on heat until tender, checking occasionally and adding water when needed to maintain the broth.

Step 4: Add Pepper Soup Spices
Once the meat is soft, add uda, uziza, control onions, and other pepper soup spices. Stir well to combine flavors.

Step 5: Add Scent Leaf
Add chopped scent leaf into the pot and stir gently. Let it simmer briefly to release aroma and flavor.

Step 6: Serve Hot
Once everything is well combined and flavorful, turn off heat and serve hot. Enjoy with zobo or your preferred drink.

Notes

Use he-goat and cut meat into even sizes for proper, even cooking. This ensures tenderness without the meat falling apart.

Cook the meat slowly and patiently for the best broth. Rushing will result in tough meat and weak flavor.

Add water gradually and keep enough to maintain a rich broth. Too much water will dilute the taste.

Add pepper soup spices only after the meat is tender. Early addition can reduce their aroma and strength.

Balance spices carefully so no single flavor overpowers the soup. Proper balance gives the signature pepper soup taste.

Use scent leaf at the final stage to preserve its aroma. Overcooking reduces its freshness and fragrance.
