  • Groundnut Oil: Ideal for frying; gives even cooking and a light crispy finish.
  • Onions: Add subtle sweetness and aroma, enhancing overall flavor.
  • Salt: Balances and boosts the natural sweetness of the plantains.

Instructions

Step 1: Prepare the Plantains
Peel and slice ripe plantains into round or diagonal pieces, depending on your preference.

Step 2: Season the Plantains
Sprinkle a little salt over the slices and mix well to enhance flavor.

Step 3: Heat the Oil
Pour groundnut oil into a pan and heat on medium until ready for frying.

Step 4: Add the Onions
Add cut onions into the oil and fry lightly until fragrant to flavor the oil.

Step 5: Fry the Plantains
Add plantains without overcrowding. Fry until golden, then flip to cook the other side evenly.

Step 6: Drain and Serve
Remove and place on paper towel to drain excess oil. Serve warm on its own or with meals.

Notes

Use ripe plantains with yellow skin and black spots for best sweetness. Unripe plantains will taste bland and starchy.

Heat oil to medium, not too hot or cold. Too hot burns quickly, too cold makes them oily.

Do not overcrowd the pan while frying. This ensures even cooking and proper crispness.

Fry onions first to infuse the oil with flavor. This adds extra depth to the plantains.

Flip gently and fry until golden brown on both sides. Overcooking can make them too soft or burnt.

Drain on paper towel after frying. This removes excess oil and keeps them light.
