It’s enriched with palm oil, spices, and simple ingredients that bring out a rich, savory taste. Nutritious and filling, it’s perfect as a wholesome meal on its own or paired with plantain, yam, or rice.


Ingredients

  • Beans (Brown Beans): Main ingredient; softens easily and gives rich, hearty flavor.
  • Crayfish: Adds deep, savory seafood taste.
  • Red Oil (Palm Oil): Brings color, richness, and binds the dish together.
  • Onions: Enhances aroma and overall flavor depth.
  • Seasoning Cube/Bouillon: Boosts and balances savory taste.
  • Salt: Enhances and brings out natural flavors.
  • Habanero Pepper: Adds heat and spicy depth to the porridge.
  • Red Bell Pepper (Tatashe): Adds flavor, color, and mild sweetness (remove seeds for best taste).

Instructions

Step 1: Cook the Beans with Onions
Pick and wash beans thoroughly. Add to a pot with sliced onions and enough water, then cook until it begins to soften.

Step 2: Soften the Beans
Continue cooking on medium heat, checking and adding water as needed until the beans become fully soft but not mushy.

Step 3: Add Pepper Mix, Salt, and Seasoning
Add blended red bell pepper and habanero pepper. Season with salt and seasoning cubes, then stir well to combine.

Step 4: Add Crayfish
Add ground or blended crayfish into the pot and mix thoroughly to deepen the flavor.

Step 5: Add Red Oil
Pour in red oil and stir properly to combine. This gives the beans porridge richness and color.

Step 6: Taste and Serve
Adjust seasoning if needed, turn off heat, and let it cool slightly before serving warm.

Notes

Cook beans slowly and check often. Add water as needed so they soften evenly without burning.

Do not rush the softening process. Properly cooked beans give a smooth, creamy porridge texture.

Add pepper mix only when beans are soft. This helps the flavor absorb better and avoids hardening the beans.

Crayfish and seasoning should be balanced. Too much can overpower the natural bean flavor.

Add red oil last to build richness and color. It also helps bring all flavors together.
