Zobo Drink

Zobo Drink is one of those drinks that instantly takes you back to school days, hot afternoons, parties, roadside snacks and that first cold, bold, refreshing, slightly tangy and honestly one of Nigerian’s most loved home made drinks after soya milk. If you grew up in Nigeria, chances are that Zobo has been part of your life at one point or another.

WHAT IS ZOBO

Zobo, also known as hibiscus tea, is made by boiling dried hibiscus flower petals in water and sweetening it to taste. It has a beautiful deep red color and  a naturally tart flavor that can be adjusted with sugar, honey and fruit. You can also add other ingredients which  we’ll be addressing in a bit.

Whether you’re serving it at a party alongside Meat Pie and Chin Chin, or enjoying a chilled glass after a spicy meal like Jollof Rice, Zobo always shows up and delivers.

One drink, many names.

While we call it zobo in Nigeria (often served cold with pineapple and ginger) this drink is enjoyed all over the world. In Egypt and the Middle East, it’s known as karnade and is often served hot. In Mexico, it’s called Agua de Jamaica, and is best taken when it’s ice cold. Ghanaians enjoy their version as Sobolo, with ginger being the major spice. Different names, same beautiful taste and it always delivers.

Dried Zobo leaves (Hibiscus flower leaves) : This is the major ingredient in this drink. These leaves give the drink its deep red color and a refreshing tangy flavor. They are rich in antioxidants and form the base of the beverage. They can be found in open markets or supermarkets near you. Wash the zobo leaves before boiling if they are not pre-washed.Washing helps remove some dirt that can be trapped in the leaves. 

Ginger: Adds a warm, spicy flavor to the drink and helps balance the tartness of the hibiscus. Ginger also aids digestion and gives the drink a comforting heat. In situations where the fresh ginger is not available, ginger powder of groung ginger is a great alternative, though it reduces the flavor that fresh ginger gives. 

Pineapple: Brings natural sweetness and a fruity freshness that softens the sharpness of the hibiscus and spices. For this recipe, both the pineapple skin and the pineapple juice play a huge role. It helps boost the natural flavor of the zobo drink. It also serves as a sweetener in the drink.

Cloves:
Provides a strong, aromatic spice that deepens the flavor of the drink. A little goes a long way, adding warmth and a slightly sweet bitterness. It gives the drink that traditional and earthy depth.

Cinnamon sticks: Cinnamon ties all the flavors together while adding a gentle spice and natural sweetness. Cinnamon does not just bring aroma, it adds a special flavor to the drink, thereby elevating the taste of the zobo drink. Cinnamons also have many health benefits. In cases where cinnamon sticks are not available, ground cinnamon or any other alternative is advised but it adds other flavors to the drink.

How to make Zobo drink

Step 1: Boil your Zobo leaves

  1. Rinse the zobo leaves in water (if not pre washed) and place them in your pot.
  2. Go in with your cloves
  3. Peel your pineapple skin, wash and add to the zobo.
  4. Wash and add the whole ginger without peeling. You can also peel depending on your preference.
  5. Finally, include the cinnamon sticks.

Sep 2: Allow to boil for few minutes

  1. Add water to the zobo leaves and other ingredients that you’ve added in the pot.. The lesser the water, the more thick it becomes. Vice versa.
  2. Once the water is in, turn on the heat and let the mixture simmer.
  3. Stir occasionally to ensure all the ingredients blend evenly.

Step 3: Add the pineapple juice

  1. Once you’re sure the zobo is properly cooked, turn off the heat and set it aside. The Zobo drink should have a slightly thick consistency at this stage.
  2. Strain the mixture to remove the pineapple skin, cloves, and other solids.
  3. Blend the pineapple into a juice and set aside.
  4. Allow the zobo cool before adding the pineapple juice. 

Step 4: Put Your Sugar

  1. After the zobo has cooled and the pineapple juice has been added, measure the sugar and mix it in until it dissolves completely.

Step 5: Stir to combine  

Gently stir all the ingredients to combine them evenly. Doing so ensures the flavors are balanced and every sip tastes consistent..

Step 6: Serve your Zobo drinks chilled

Zobo drinks taste best when served cold. After mixing all the ingredients and achieving your desired taste, pour the drink into airtight containers and place it in the refrigerator. Add ice cubes to enjoy the drink immediately, giving it a quick, refreshing chill.
