Chin Chin has always been an all time favorite for Nigerian households especially during the holidays or a big celebration such as a wedding, a birthday or just a Sunday afternoon family reunion.ย 

It is also a perfect snack for a school lunch for the kids and adults or when an impromptu guest visits.

We offer it as a gesture of welcome when guests arrive, and also present it as a welcoming gift when visiting others.

Since Christmas is right around the corner, I decided it was the perfect time to make several bowls of this snack to enjoy with my family and to share generously this season. I also plan to add my Cinnamon Sugar Cookiesย to the menu.

Just as I was about to start, I spotted a huge bunch of those delicious, ripe, golden plantains and bananas i bought from at the market, then the genius in me struck, โ€œWhat if I took that amazing, mellow sweetness of the ripe banana and mixed it right into the crunchy dough of my Chin Chin?โ€

The result? Banana Chin Chin. Itโ€™s softer, sweeter, smells incredible while frying, and has a rich, melt-in-your-mouth quality that the original doesn’t have.

And guess what, my kids and husband loved it and it’s so easy to make just like my Peach Dump Cake.

This was two years ago, now baking Banana Chin Chin has become my annual Christmas ritual. Itโ€™s the reason my friends and loved ones look out for my visits during the holiday season.

Made from a simple dough of flour, sugar, milk, butter (or margarine), and often seasoned with a hint of nutmeg, itโ€™s deep fried to a beautiful golden perfection.

Ingredients

  • All-purpose flour
  • 6 very ripe bananas
  • Sugar (reduce if bananas are very sweet)
  • Butter or margarine
  • Eggs
  • Evaporated milk or fresh milk
  • Vanilla essence
  • Nutmeg powder
  • Baking powder
  • Pinch of salt
  • Vegetable oil for deep frying

1. Prep Your Ingredients

  • Peel and mash the 6 ripe bananas in a large bowl until very smooth
  • The riper the banana, the sweeter and more flavorful your chin chin
  • Remove any stringy bits that might affect texture
  • Set aside while you prep other ingredients

2. Make the Dough

  • Add eggs
  • Stir together
  • Add milk
  • Add melted butter
  • Add Cinnamon powder
  • Stir together
  • Add the seived flour
  • Add baking powder
  • Stir together till it turns to a dough
  • Mix to combine with your hand
  • Place on a clean surface to roll

3. Shape the Magic

  • Cut into desired size or cut into tiny size

4. Fry to Golden Perfectionย

  • Add the dough into the deep oil.
  • Fry for 8-10 minutes until golden brown.
  • Fry in small batches and don’t overcrowd the pot.
  • Stir occasionally to ensure even browning.
  • Let it cool down and the Banana chin chin is ready.

Essential Tips for a flavorful and crispy Banana Chin Chin

Banana ripeness is everything: Use bananas that are very ripe with brown spots. They’re sweeter, mash easier and give the best flavor. Don’t use green or barely yellow bananas.

Dough consistency matters: The dough should be firm and slightly sticky but workable. Too wet means soggy chin chin. Too dry means hard, tough chin chin.

Oil temperature test: Drop a small piece of dough in the oil. If it sizzles gently and rises slowly, then the temperature is perfect. However, if it browns immediately, then itโ€™s too hot but if it just sits there, then it’s too cool.

Batch control: Never overcrowd your frying pot. This drops oil temperature and makes the chin absorb too much oil, becoming greasy instead of crispy.

Patience while frying: Don’t rush. Medium heat and patience give you golden, crispy chin chin. High heat will give you burnt outside, raw inside chin chin.

Complete cooling: This is crucial. Warm chin chin will steam in containers and become soft. Allow it to cool completely before packing.

Storage Secret: Add a piece of dried bread to your storage container to absorb any moisture and keep chin chin crispy.

Storage Solutions

  • Store in completely airtight containers or zip-lock bags. Exposure to air makes the chin soft and stale.
  • ย A properly dried chin chin stays fresh at room temperature for 3-4 weeks. Avoid refrigeration.
