Asun Jollof Rice Recipe (Step-by-Step)
Step 1: Prepare the Goat Meat (Asun)
1. Start by washing the goat meat thoroughly. Place it in a pot and add chopped onions, thyme, curry powder, beef seasoning cube, salt, and water. Mix well, cover, and allow it to cook for about 25 minutes.
2. Depending on the cut of goat meat, cooking time may vary slightly. Once the meat reaches about halfway doneness, remove it from the stove.
3. Grill or fry the meat to complete the cooking process until it turns golden brown.
4. After frying, cut the meat into small bite-sized pieces. Remove any bones, then transfer the meat into a bowl and set aside.

Step 2: Pepper Mix Preparation
1. First, blend fresh tomatoes, scotch bonnet peppers, red bell peppers, and red chilli peppers together with garlic and ginger. Add as little water as possible to keep the mix thick and rich.
2. Next, place a pot on medium heat and fry the blended pepper mix with your fresh tomato. Stir continuously until everything combines well and the mixture thickens. Let it fry for about 7 minutes. This step helps remove the raw tomato taste water in the tomato and pepper mix.
Step 3: Making the Jollof Base
1. Heat oil in a clean pot and add sliced onions. Fry until fragrant, about 3โ4 minutes. Add the already boiled tomato paste and pepper mix, then fry until the color deepens. Boiling the tomato eliminates bitterness and enhances the natural sweetness of the tomatoes, giving the dish a deeper flavor profile.
2. Keep stirring to prevent burning, then add the prepared pepper mix. Allow it to cook thoroughly until the oil slightly separates from the sauce. Then season with salt, beef seasoning cube, bay leaves, curry powder, and thyme.
3. Once the sauce looks well-reduced and aromatic, add the beef stock you prepared earlier. Cover the pot and let it simmer gently for 5 minutes on low heat. This is the tomato sauce.

1. Wash the rice repeatedly until the water runs clear. Transfer the drained rice into the tomato stew and stir carefully so the grains coat evenly.
2. Then, add water until it sits slightly above the rice level. Taste the liquid at this point and adjust seasoning if necessary. 3. Go in with little water and allow to steam. This makes the asun sauce.

How to Choose the Best Goat Meat for Asun
Choose meat from male goats โ Meat from male goats is often softer and richer in taste. Female goats usually produce firmer meat that takes more time to become tender during cooking.
Use the smell as a quality check โ Goat meat has a natural scent, but it should not smell unpleasant or overly strong. A harsh or foul odor may indicate poor handling or spoilage.
Select the appropriate goat breed โ For premium Asun, African Dwarf goats (known for their short legs) are an excellent option because their meat is naturally tender and cooks quickly, usually within 20 to 35 minutes. Larger breeds such as Boer or Kalahari Red goats produce leaner and firmer meat that often requires slow cooking for about 1.5 to 3 hours. If you want to shorten the cooking time, using a pressure cooker works well.
Pick meat with slight fat distribution โ Meat with small streaks of fat helps maintain moisture and boosts flavor during grilling. Extremely lean cuts often become dry and less flavorful.
Check alternative labels outside Nigeria โ In many countries, goat meat may be sold under the name โmutton.โ If you cannot find cuts with skin attached, skinless goat meat is still suitable.
